The Story behind the Boon Cheese…
Boon Cheese has arguably been around for over 80 years. Back in the 1920's, the Boon Store was owned by a man named E.T. Smith. One day a train going through town derailed spilling it's cargo all over. Part of that cargo was a large number of cheese wheels, which Mr. Smith acquired. Storing the cheese in his cellar, he eventually discovered that each cheese became stronger and more flavorful with age. Thus began the tradition of the Famous Boon Aged Cheese.
The cheese is a favorite of many and has been literally been shipped all over the globe. We have many people of all walks of life travel from miles away just to get another piece of the delicious Boon Cheese.
Although many people quickly associate “sharp” cheese with cheddar, the Boon Cheese is actually a Colby. Every wheel of cheese has a slightly different flavor and texture. It is aged at room temperature with the wheels being turned 1 to 2 times a week (to keep the juices flowing back and forth through the cheese.) We have what we call “Sharp” Boon Cheese, which is generally aged anywhere from 8 to 12 months before it is opened, and an “Extra-Sharp” Boon Cheese which is aged 1 ½ years or more before it is opened. In addition to the Boon Cheese we also have a White Cheddar that is not aged, but it has it's own mouth-watering naturally sharp flavor.
